Chicken Pasta

1 lb pasta, any kind
About 1.5 lb boneless chicken breasts (2-3 depending on size)
1 lb mushrooms, quartered or sliced
5 cloves fresh garlic, minced
4-5 roma tomatoes, cut into bite size pieces
2-3 tbsp lemon juice
olive oil
italian seasoning
salt
pepper
Parmesan cheese
Heat some olive oil in a pan over med-high heat. Start water boiling for pasta, start pasta cooking once water is boiling. Season both sides of chicken breasts with salt, pepper and plenty of the italian seasoning. When the oil is hot, place in pan and cook. As soon as the chicken breasts are done, remove them from the pan. Add a little more olive oil, then the garlic and mushrooms. Cook until the mushrooms are done. While the mushrooms are cooking, slice the chicken into bite sized pieces. Add mushrooms, garlic and sliced chicken to the cooked pasta. Add lemon juice, then taste; season with salt and pepper to taste if desired. Add sliced tomatoes and stir in gently. Serve with parmesan cheese.

Zam, Im getting ready to wing a Black Bean soup. I was shopping for a base, considering bacon or ham hocks when I saw spare ribs on sale. Ive got a whole rack boiling now, mmmm Ive got a good feeling about this soup. Ill send ya a mail with the recipe if it turns out.
